This dessert doesn’t need flour or eggs or measuring cups. If you can dry a strawberry well, you can make this. I say that with confidence, because I’ve made these for years with my nieces, my neighbor’s children, even the Sunday church potluck crew. They always bring smiles.

The most important thing here is dryness. Even a single drop of water can turn your white chocolate grainy. I always set my berries out on a clean towel and walk away. Let them sit. Let them breathe.

Choosing the right white chocolate

I’ve tried both chips and melting wafers, and I will say this: wafers are steadier. They melt smooth without fuss, and they coat without streaking. Adding the patriotic drizzle

  • 2 ounces red candy melts
  • 2 ounces blue candy melts

Instructions

  1. PREPARE THE STRAWBERRIES: Gently rinse the strawberries and pat them dry with a towel. Set them out to air-dry completely. Ensure no moisture remains, as even a drop of water can cause the chocolate to seize.
  2. MELT THE WHITE CHOCOLATE: Place the white chocolate wafers (or chips with coconut oil) in a microwave-safe bowl. Heat in 20-second intervals, stirring between each round, until fully melted and smooth.
  3. DIP THE STRAWBERRIES: Hold each strawberry by the green stem and dip it into the melted white chocolate. Let the excess drip off, then gently twist to ensure an even coating. Place the dipped strawberries on a sheet of parchment paper. Repeat until all strawberries are coated.
  4. LET CHOCOLATE SET: Allow the dipped strawberries to sit at room temperature for 10–15 minutes until the coating is firm to the touch.
  5. PREPARE THE COLORED DRIZZLE: Melt the red and blue candy melts in separate microwave-safe bowls using the same 20-second interval method, stirring until smooth.
  6. FILL PIPING BAGS: Spoon the melted red and blue candy into separate piping bags or small zip-top bags. Snip off a tiny corner of each bag to create a small opening for drizzling.
  7. DECORATE THE STRAWBERRIES: Drizzle the red and blue melted candy over the white-dipped strawberries in any pattern you like—diagonals, zigzags, or criss-cross lines. Work quickly before the melts begin to firm.
  8. SET THE DECORATION: Let the decorated strawberries sit at room temperature for 15–20 minutes or place them in the refrigerator for 5–10 minutes until the drizzle is completely set.
  9. CHECK FOR DONENESS: Gently touch or shake a strawberry to confirm the chocolate and drizzle are firm. Once set, the strawberries are ready to serve.

Notes

For best results, use ripe but firm strawberries with no moisture on the surface. Store the finished strawberries in a single layer in the refrigerator if not serving immediately.
