There’s something quietly satisfying about turning a few frozen slices of banana into something soft and spoonable. This isn’t churned, custard-style ice cream. It doesn’t need eggs or cream. Just a freezer, a food processor, and a bit of patience.

Years ago, I scribbled the first version of this in my notebook beside a recipe for chocolate pudding. I had a handful of overripe bananas and no time for baking. I added peanut butter, gave it a spin in the processor, and watched it turn into something cool and creamy that made me pause.

You don’t need fancy equipment. And if it cracks or blends unevenly at first, don’t worry. Let the processor keep working, and it will smooth out. Like most things, it just needs a little coaxing.

Some days I add cinnamon. Other days I drop in a few chocolate chips at the end. If Chloe were here, she’d stir in chopped walnuts. That’s always been her preference, even when she was a teenager bringing me papers with smudged ink and too many metaphors.

In my notes, I’ve written “use the good stuff,” but I’ve tried both. Natural, unsweetened peanut butter gives a smooth texture and lets the banana shine. It blends easily, especially if it’s slightly warm. The traditional kind — the kind some of us grew up spreading on toast — adds sweetness but can make the blend a little stiffer.

If you’re using sweetened peanut butter, skip any maple syrup. If your peanut butter is on the salty side, go gentle with the extra pinch.

After blending, you’ll have something that looks and feels like soft-serve. You can eat it right away — I usually do. But if you prefer firmer scoops, tuck it into a container and give it a few hours in the freezer.

A shallow tin works faster than a deep bowl. I mark the time in my notebook, but I also use my thumb. If I can press lightly and leave a dent, it’s ready.

Use bananas that have brown spots. They taste sweeter and break down more easily. I freeze mine in single layers on parchment and keep a bag ready at all times.

A food processor blends more evenly than most blenders. But if you’re using a high-speed blender, do it in small batches. Add milk only if the blades stall.

This recipe also keeps well in the freezer for a week. I write the date on masking tape and leave it beside the jam jar. Some days I use it for breakfast, over oatmeal, like a frozen Peanut Butter Banana Oatmeal topping. Other days, I eat it straight from the spoon.
