Chocolate Caramel Rice Krispie Treats

The first time I made these Chocolate Caramel Rice Krispie Treats, it wasn’t a casual endeavor. It was a stormy winter evening, and my kitchen became an alchemist’s den, with caramel bubbling, chocolate melting, and marshmallows stretching into sticky, silken ribbons. These treats are the sort that blur the lines between snack and indulgence, bringing together three beloved elements: the crispy crunch of cereal, the velvety richness of caramel, and the deep decadence of chocolate. As I pressed each layer into metal molds, I thought about how these small moments of creation become gifts, either for myself or for someone I love.

This recipe isn’t about perfection; it’s about texture and balance, blending the buttery marshmallow base with salty-sweet caramel and the bittersweet charm of chocolate. They’re easy enough to whip up on a whim yet fancy enough to serve at a party. Let’s unravel the magic behind these layered bites of bliss.

The Ingredients: Building a Sweet Symphony

The ingredients here are deceptively simple. Start with crispy rice cereal, the familiar base of any classic Rice Krispie treat. To transform them into something extraordinary, marshmallows and butter come together in a warm, sticky embrace, with a touch of vanilla to lift the flavors.

For the caramel layer, sugar, cream, and butter combine in a slow dance of heat and patience. A touch of corn syrup helps keep it silky, and a sprinkle of sea salt adds depth. The chocolate layer crowns everything, melting into a glossy coat that sets like edible armor. For a final flourish, a drizzle of chocolate (mixed with just a hint of coconut oil for sheen) elevates the presentation.

Each ingredient serves its purpose, creating distinct textures and flavors that harmonize in every bite.

Layering the Magic: Crafting Textures and Flavors

Start with the marshmallow layer. Melt the butter in a large, heavy-bottomed pot, adding mini marshmallows until they dissolve into a cloud of sweetness. Stir the vanilla extract at the last moment to preserve its potency. Toss in the rice cereal and quickly fold it until each piece is wrapped in sticky marshmallow. This base, pressed firmly into molds, sets the stage for the next act.

The caramel layer requires precision and care. Cook the sugar mixture over medium heat, watching as it transforms into a golden amber syrup. Stir in the cream slowly—it will bubble and hiss, but that’s part of the alchemy. When it thickens, cool it slightly before pouring a delicate layer over the rice cereal. This step is as much about patience as it is timing; the caramel must set enough to hold the chocolate but still remain pliable.

Finally, the chocolate. Melt the chips with a splash of coconut oil, creating a glossy, pourable mixture. Spread it over the caramel, smoothing it into a perfect top layer. Tap the tray gently to eliminate air bubbles and ensure the surface is uniform. Refrigerate to set.

How Long Will Chocolate Caramel Rice Krispie Treats Keep?

These treats store beautifully, making them ideal for gifting or prepping ahead of time. Keep them in an airtight container at room temperature for up to three days, or refrigerate for up to a week. The refrigerator will make the layers firmer, so let them sit at room temperature for about 10 minutes before serving to regain their soft, chewy consistency. For longer storage, freeze them in a single layer, then transfer them to a freezer-safe container, where they’ll last for up to a month.

Bonus Tips

  • Metal molds or cookie cutters: These make stunning shapes for special occasions. Grease them well to avoid sticking.
  • Adding texture: Sprinkle crushed nuts, flaked sea salt, or even colorful sprinkles over the chocolate layer before it sets for extra flair.
  • Adjust sweetness: Use dark chocolate for a more bittersweet finish, balancing the caramel’s sugary richness.
  • Make it festive: Color the marshmallow mixture with food-safe dye for themed treats, or drizzle the chocolate in holiday hues.

Serving Options: Ways to Present Your Treats

Serve these treats as standalone delights, or pair them with a scoop of vanilla ice cream for a dessert that truly satisfies. Arrange them on a platter for parties, their polished layers speaking of careful craft. For gifting, wrap them individually in wax paper tied with twine or pack them neatly in a decorative tin.

A layered treat combining crispy rice, rich caramel, and smooth chocolate for a delicious dessert.

Prep Time 30 minutes
Cook Time 15 minutes
Chill Time 1 hour
Total Time 1 hour 45 minutes

Ingredients

  • FOR THE RICE KRISPIE LAYER:
  • 6 cups crispy rice cereal
  • 4 cups mini marshmallows
  • 6 tablespoons unsalted butter
  • 1 teaspoon vanilla extract
  • FOR THE CARAMEL LAYER:
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, cubed
  • 1/2 cup heavy cream
  • 1/4 cup light corn syrup
  • 1 teaspoon sea salt
  • FOR THE CHOCOLATE LAYER:
  • 2 cups semi-sweet or milk chocolate chips
  • 1 tablespoon coconut oil or vegetable oil
  • FOR THE CHOCOLATE DRIZZLE (OPTIONAL):
  • 1/4 cup chocolate chips
  • 1 teaspoon coconut oil

Instructions

  1. PREPARE YOUR METAL SHAPES: Place metal cookie cutters or dessert molds on a parchment-lined baking sheet. Lightly grease the inside of each shape with non-stick spray or butter to ensure easy release.
  2. MAKE THE RICE KRISPIE LAYER: In a large pot, melt the butter over low heat. Add mini marshmallows and stir until fully melted and smooth. Remove from heat and mix in vanilla extract. Fold in the crispy rice cereal until evenly coated. Quickly spoon and press the mixture into the prepared molds, forming a 1-inch layer. Allow it to set while preparing the next layer.
  3. PREPARE THE CARAMEL LAYER: In a medium saucepan, combine sugar, butter, heavy cream, and corn syrup. Heat over medium heat, stirring until smooth. Increase heat slightly and cook, stirring occasionally, until the caramel thickens and reaches a rich amber color (5-7 minutes). Remove from heat and mix in sea salt. Allow caramel to cool slightly, then spoon a thin layer over the Rice Krispie layer, spreading evenly. Let it set at room temperature or refrigerate for 15-20 minutes.
  4. ADD THE CHOCOLATE LAYER: Melt the chocolate chips with coconut oil in a microwave-safe bowl, heating in 30-second intervals and stirring until smooth. Pour the melted chocolate over the caramel layer, spreading evenly to cover. Chill in the refrigerator for 20-30 minutes until fully set.
  5. RELEASE AND DECORATE: Gently press the treats out of the molds or cookie cutters. If needed, use a sharp knife along the edges for clean release. Drizzle melted chocolate over the tops for decoration if desired, and let it set before serving.

Notes

For firmer layers, chill each layer thoroughly before adding the next. Store in an airtight container at room temperature for up to 3 days or in the refrigerator for up to 1 week.

When i make carmel layer ots more cream colored versus carmel colored is this normal

    • Hi Jenee! If your caramel layer is turning out more cream-colored instead of that classic amber caramel tone, it might just mean the caramel isn’t cooking long enough to reach the right stage. When making caramel, the sugar needs to cook until it reaches an amber color, which usually happens once it hits around 320–340°F (if you’re using a candy thermometer).

If you’re going by visual cues, keep the mixture over medium heat, stirring occasionally, and wait for that deep golden-brown hue to appear. It might take a bit longer, but it’s worth it! Just be careful not to overcook, as it can quickly go from perfect to burnt.

Let me know if you try again! I’d love to help troubleshoot further if needed. 😊
